the "ita" at the end adds two traits to the word: that the word describes a small subject, and that it describes a feminine subject. the feminine version would be ma'am, but the smaller version of ma'am is "miss". sometimes "ita" is used in a figurative sense where "little" actually means "precious", like "abuelita" meaning "precious grandmother", not "little grandmother"
