That would depend strongly on the pony. I guess, by stereotype, pegasi would have firm but smooth hooves from exercise and consistently smooth surfaces. Earth ponies would have more calloused hooves, and would probably most closely resemble those of the ponies in our world. I'm guessing that Unicorns could perhaps have very delicate hoof undersides, so that they're very sensitive to the touch.

While I also had the idea that the hooves differ between races, I am not completely certain I agree with the exact differences, even though your reasoning is sound. (But I am also biased for Earth Ponies and the idea of calloused hooves doesn't sound appealing, so that might influence my thinking pattern.) Interestingly, I think Earth Ponies have the most magical hooves of the three races, since Lauren Faust said that was the magical part of the Earth Pony (with wings for Pegasi and the horn for Unicorns), and that the Alicorn has all three magical parts of each race (which is also what bothers me when they say Alicorns are simply Unicorns with wings or Pegasi with a horn). Anyway, since Earth Pony hooves are so magical, I can't imagine them being too rough and/or calloused. But at the same time, I also can't imagine them being much smoother or such than the hooves of the other two races, since they do work the most in the fields. I guess I don't really have a conclusion myself yet... It's worth thinking about, though!

'Magical' shouldn't confirm to the stereotype of elegant and smooth. Also, I'm thinking that their passive magic comes with their not-so literal connection with the earth. So, it's not necessarily their hooves or even how they use them that allows them to grow crops where other ponies would not be able to. It's a bit like the pegasi cloudwalking I think in that they might move on the clouds with their hooves, but the magic doesn't really come from the hooves themselves. (But I guess this is a bit of semantics, possibly, as you could go this route with unicorns too...)
So, I picture them as having calloused hooves because they probably work a lot with them and walk on rough ground more than other ponies. A stereotype, but I can't really find a flaw with it. They can still be cute. It's okay. ;D

Hmm. According to the semi-canon books, Cadance was a Pegasus turned Alicorn. And people often talk about "how Cadance got her horn". I was thinking about Earth Pony magic coming from something different than their hooves... But I do like each race having a tangible body part that's their magical signature, so to speak. It would then make the most sense to have this be the hooves for Earth Ponies. That said, you are right probably about magical not automatically meaning elegant and/or smooth. ...I guess I just dislike the idea of Earth Pony hooves being 'uglier' than other hooves.
