This is the cake was the final project in my Practical Exam class. The inside, which you cannot see, is 2 layers of a "Christmas spice" cake that I improvised around a high-ratio yellow cake recipe separated by a basic cream cheese filling (recipe from Wilton). Most of what you can see is buttercream (again, Wilton recipe) tinted with varying amounts of "Moss Green" dye or "Eggshell"(garland). The "Christmas ball" ornaments are made from cast sugar (the hooks were made from star anise stems) and, since my camera absolutely killed the effect, you'll just have to imagine how beautiful the pearl dust swirled around inside the glassy sugar was. The same could be said about the gold dust on my piped garland or the sugar applied to the pink and green (coloured, cast white chocolate) ornaments. It was a short notice project and it shows. I tried to use a variety of simple, elegant designs for the decorations, without doing anything so complex I'd mess it up; nobody else in my class had the balls to do any sugar work and strangely, nobody used chocolate either. The tree shape is obviously cut by hand, my piping is sub-par, etc. It might have looked a little better with a layer of fondant on it, but messing up fondant (which isn't hard when covering an awkward shape like this) looks worse than having none on at all. Also, pertaining to my "Christmas" theme, I wanted a cake that everyone in the family could enjoy (and not peel off the decorations before eating). Overall, I consider this project a success. Most of my classmates (and the instructor) agreed my cake TASTED the best, and I can see which visual aspects I screwed up. Let this cake be a reminder of the real importance of this holiday and enjoy the company of those you hold dear.
