Cool stories and interesting monsters. Too bad none of them are real; I'd have kinda liked a tanuki or kitsune waifu. But yes, yokai phenomena are sadly verifiably untrue; your legs bleeding after walking through icy cold mountain winds turns out aren't adorable weasels slicing you up with razor-sharp sickle claws and then magically bandaging it up afterwards, just the normal interactions between the water inside of your flesh and extremely cold, dry air.

The Scientific Method by which we can disprove verifiably disprovable claims was, of course, invented by Christians as a manner of measuring and understanding God's creation. It ceases to make sense when divorced from the context of a culture that believes in a single, omnipotent God creating a set of consistent rules by which the physical world will operate when not miraculously intervened with.

These are memes. By definition they can't be all-inclusive and go over every detail or nuance regarding what may be right or wrong about something, and need to be reductive to be punchy.
