I listen to the song, I write the sheet music for it in MuseScore (sometimes I have to download the song and look at it in Fleximix to see if I'm missing any of the instruments in my sheet music), Then I import the sheet music into Guitar Pro, which makes it into a midi file, which I import into GXSCC, which bit crushes it into 8 Bit.

Ah, GX-SCC. Haven't played with that in years. You do know about the OPLL mode, don't you? You click on some part of the program and it flashes and puts it into the other mode.

Thanks for being upfront about using the program. There is nothing wrong with using it, but a lot of people (typically on You Tube), use to rip MIDIs, usually from VGMusic.com, run them through this program, and claim the end result as their own.
