So, can she do the acid armour trick but with rubber? (You know, the whole "dissolve into water" trick that Vaporeon has in the anime.)

Nope! Those three are it. They're quite a lot of resources to create, so that prevents him from making very many. Though I encourage others to create their own rubber girls~
