But also, I find that when making things in "Sonic style", the Ai often defaults to giving the character Tails-like bangs. And if it decides to do that, I can't find a way to stop it. (No negative prompts seem to help :/ )

Didn't work. If I have a tag to indicate the Sonic style, the Ai will usually insist on certain attributes related to the official Sonic characters. (Besides Tails' hair, I also have frequent problems with hedgehog spikes being added, or forehead marks/jewels that I assume have to do with Blaze.)
Negative prompts just seem like a minor suggestion that maybe the Ai will take into account one in 100 attempts. It's not that I don't try to use them, they just rarely seem to have much impact, if any.
