Holo, (Horo in Japanese), is an anthro wolf who looks like a human with wolf ears and tail throughout most of the series  She changes into an extremely large wolf whenever she believes it's necessary to correct a wrong of some kind.

It was a pretty good anime series but, to some, it was boring because it taught about economics and there were several episodes where they spent 10+ minutes explaining economics.  That may be why the series ended without a proper tying up loose ends.

More than you might imagine, especially in farming communities.  A bad harvest can mean a bad economic forecast for a region and, conversely, a good, even great, harvest can lift the economy of the region.
