The fight is already initiated. The patron of the bar has put his hands (assault) on the bartender. The bouncer has a right to protect the patrons of the establishment. Its what he was hired for. He does not go around and pick fights with random people, but he is allowed to force you to leave, such as placing his hand on your shoulder and escorting you to the door, then giving a verbal warning not to come back or the police will be called. The wolf is liable for everything resulting from this scenario, even if the bouncer now beat the crap out of him, since the wolf started it.
He is 100% doing everything right in this scenario, so props to him. Being intimidating is 90% of what bouncers do.

Yeah there was a conflict between the bartender and the other guy and yes hi did both threatened and assaulted the bartender. Now here's what the bouncer did: threatened and escalated the situation, cracked his knuckles which is a form of both intimidation and a sign to start a fight and what seemed like he was about to throw hands all towards someone who was agitated and possibly drunk. As for what the drunk guy did can be assumed that he thought he was in danger of being harmed and defended himself. In these situations you should de-escalate and call the cops and not try to be a hero and fight. To be fair none of this wouldn't have happened if the bartender didn't pin him against the entire bar

What are you talking about? The bartender didn't 'pin him against the entire bar'. He changed the channel, something he has every right to do. The wolf getting upset at him is his own problem, he decided to threaten the bartender. What the wolf thought was going to happen is irreverent. He committed a crime.
It is the bouncers JOB to step in if a fight is going to break out, not stay in the back and call the cops and let fights happen.
