If Amy were to have a super form, she shouldn't be a force of nature like Super Sonic, who uses his tremendous power and speed to destroy/subdue his enemies. But rather, her love and compassion would be amplified to such an extent that anyone within a considerable radius of a few miles would feel a sensation of warmth in their hearts and a desire to help. Even robots with a degree of artificial sentience would be reached at a close proximity, allowing them to re-program themselves to serve benevolent purposes.
The drawback however is that because Amy is still a normal girl and her body is not like Sonic's, which possesses a unique molecular structure that allows him to achieve and withstand things others cannot, the power of the emeralds burns the light of her life at a very fast rate, which along with Amy's passionate desire to help others - even at the cost of herself - would put her own life in danger.
