[I've had the idea of a setting where Hime was raised by a secret tribe of witches for sometime. I wanted to make them somewhat interesting by linking their magical abilities through their selected patron demon and the sins associated with them.
In this case Hime made a contract with Beelzebub lord of the fliers, who's associated with the sin of Gluttony and therefore makes Hime a Gluttony witch. Gluttony Witches draw magical power through high calorie counts in big meals, subcutaneous fat also functions as their base pool of magic.
Basically this leads her weight to shift rapidly depending on how she uses her magic, and big spells will almost always require a feast as an offering beforehand.]

I've thought about it a bit! And I do think it'd be fun to create a few more witchy friends for the setting. A lot of them would probably function in similar ways, though maybe the gain and store magic at different rates. IE: A Greed witch gains a passive amount of magic based on the value of her possessions on hand, A Sloth witch maybe converts the amount of time she rests to magical power, A lust witch would gain magic through the release of intercourse and whatnot.
It doesn't have to be "Balanced" like a game or anything but I do like the idea if the ways of gaining and retaining magic is somewhat inconvenient for all the witches. Of course they get used to it, but I think it adds to the fun if it takes so much effort that if makes the girls side eye one another.

In my worldbuilding, I have borrowed from medieval conspiracy theories that witches had sex with demons a lot, so magic is gained as a form of cognitohazard by consensually having sex with demons - nothing is transferred from the demon to the witch, the magic manifests purely from a cognitive change in the witch, and that is the knowledge that they had consensual sex with a demon.
This also means that their magic weakens if they don't have sex with a demon for too long.
Your system definitely makes for better drama and rivalry though! I fully get the balance aspect as well - maybe there could be some form of exclusive demons that are more powerful than the others, but the exact nature of these demons is a closely guarded secret kept by ancient witch families? Power begets power after all!

When it comes to witchcraft stuff, I think it's super interesting to take inspiration from lots of sources. Everyone ends up making something pretty fun and unique that way, while still building off the same general building blocks about the idea of a "Witch". I need to look into it further but I'd wanna check out more of the ideas the church had about witches in the Malleus Maleficarum and I'm also really interested in Solomon's lesser key sigil designs because they look absolutely amazing.
I think the concept of exclusive demons would be pretty neat. Like certain named demons are typically associated to sins or rings of hell usually and they tend to have rank, so having a witch make a contract with a specific demon would probably add its own variety even amongst witches of the same sin. At some point I'll try to tie down the magic system into something more solid, I think it'd be a cool idea for the magic of specific sins to manifest in different ways. Something like adjacent elements that a demon may have domain over, for example a gluttony demon could have domain over the concept of "Consumption" or "Void" which would allow the witch access to spells of that kind of nature. Its more of an idea to allow witches to be different between each other, though It might be fine for them to have access to general spells along with the special ones their demon gives them access to.
