list of things u will need
1pound of beef hamburger
5 flower medium tortillas
1 can of gourmet Nacho cheddar cheese sauce [can be found at walmart for cheap]
1 pouch of taco seasoning
1 can of Pace Diced Tomatoes with Green Chilies
Worcestershire Sauce
Onion Powder
Black pepper
Chipotle Chile pepper powder
1 Jar of Chunky Salsa
1 pie tin
The meat
Brown your meat normaly but add in 1 tsp of the Worcestershire sauce while cooking this is optional I just like the warm flavor is adds to the meat. While you are brownign your meat go ahead and preheat your oven to 350F. While your oven and meat are warming up grab a bowl and dump in your taco seasoning [don't throw the seasoning pouch away we will need it] add in 1/2 cup of your Salsa, 1/4 tsp of onion powder, 1/4 black pepper, and half of 1/4 tsp of chipotle chile pepper powder. Then use your empty taco seasoning pouch and fill it up with water then pour it into the mix. Stir every together until you get a runny paste. [you may throw away your taco seasoning pouch, amount of water the pouch can hold is 5 tsp] Once your meat is done drain the fat out then place the meat back in the skillet. Half your heat that you had use to cook your meat then add in the paste from the bowl. Mix and coat all the meat in the runny paste and let simmer. While simmering take you can of Pace Diced Tomatoes and green chilies and drain out all the liquid that you can. At this point half your stove top temp again. Take your pie tin and lay down one tortilla and press it in until flat onto the walls.[if need be microwave your tortilla in a damp paper towel for 15 seconds to make it more playable]. Spoon out your diced tomatoes and green chiles onto the tortilla. you only need about 3-4 spoon fulls to get good coverage. we don't want to little or to many. Turn off the heat to your stove top and start spooning our your meat onto the tomatoes. Again not to much and not to little we need to be able to compact this all down. Now we can start to spread the cheese topping. Now with the cheese you don't need much just a light coating on top of the meat. [helpfull tip if you use the whole can of cheese on this pie it will all pour out and get into your stove, you might only use 1/4 to 1/2 the can depending on how cheesy you want it. I use 1/4] once you have your cheese done Place down another tortilla and repeat the layering process. now on your top layer leave it blank and start to lightly press your pie down. do it soft and slow until you feel it is nice and compact. Take the edge of your pie tin and lightly bend it up to keep any juices from the tomatoes and such from spilling over its just a safety precaution i have. Place in the oven and let bake for 13 minuets. Once done you can pull it out and cut into it like a real pie. You may top with sour cream and shredded lettuce and anything else you like. [helpful hint if your looking for a slightly cruncher crust leave in the oven for 15 minuets instead of the 13. Also if you don't like that the bottom of the pie is damp with all the juice from the tomatoes and chilies then before you add them in put them into a bowl and lightly press and spoon onto them while your hold the bowl tilted over a sink to get more juice out. The only issue I have with pressing the tomatoes and chiles is since there smaller I seem to add more of them to the layers and run out about to the 3rd tortilla]
To store simply place plastic wrap over the top. To reheat uncover plastic wrap and place in oven at 350 and cook anywhere from 5-10 minuets depending on how much is left.
Feeds about two people. A great picnic item for sweethearts. But most of all you can make about 2 or so of these and it will keep potheads like myself happy for hours.
