I've seen jalapeños that large and long. But also Serranos that grow a bit thicker than usual.

Technically its the fat content that absorbs and starts to break down the capsicum effect. Butter, lard, evaporated milk is quite effective since it's concentrated milk fat and protein. Other stuff that works well is oatmeal due to it's carbohydrates in a more glue like state. It's also why Gluten is effective.
