School systems are designed to keep track of a bunch of kids. Two parents to 275 offspring, maybe not so much. Judy would also have the advantage to know when they normally do their headcounts to make sure everyone's there, so she'd know the best time to whisk one of them away long before anyone catches wind that one's missing, and even then, it's not immediately apparent what caused the absence. In the beginning they may just wait and see if that cub comes back, or be like "Oh when she gets back, she's gonna get it!" That's assuming they don't suspect they might have miscounted, I mean 275 is A LOT. A miscount is certainly possible when they're all there. All the while Judy can be right there to "help" with the search when the absence becomes more than just a routine annoyance.

For Gideon the situation would depend on how trusted he was. People are oft ready to divide the world into 'one of the good ones' vs 'the rest of them', Judy does in the movie at one point. A solid alibi could certainly be concocted for him.
