I always find characters that you can't see their eyes interesting, they always seem mysterious or slightly strange. Challenge of course is getting right emotion shown without the aid of the characters eyes can be frustrating challenging.

This is all true, but there are some 'cheats' you can pull to make the audience lean towards a certain interpretation of what they're seeing- One obvious example with such characters is expressing anger by making their hair sharper or frizzy.
