This may sound a bit racist, but only the unicorn race really needs to be able to be book-wise...the earth ponies excel in field work and such, and the pegasi ponies mainly are weather workers, and both types have entertainers, artists and such, but they seem to not favour book-ish things (aside a certain Pegasi Writer). Essentially, the unicorns are the ones using spell books, doing magic studies and such. You are of course right, and it looks silly (but cute) to use the mouth as hand-y tools... I also know a person irl who has no arms, and she does art with her mouth. Nothing wrong in using any tool you can / are able!
