I am wondering right now, do they even have Sentries down there?

I've been wondering about this since the caverns were first shown.

I honestly only began wondering after it was mentioned for how far the underwater River stretches.

oh they absolutely do! They may put a foolish amount of faith in their city wall, but they are aware that the underground caverns may be a potential weak spot if their specific tunnels are breached, so there are unpopulated stretches with guards on sentry duty. As well as some guards acting as peacekeepers among the denizens, plus customs dictates that the princess has at least one guard nearby at all time for security reasons
However, only the populated and easily accessible stretches of the underground river is guarded, as it goes so deep that they simply would not have the manpower for it
I just sadly did not have enough time to explore it in this chapter ;w;

That´s fine, the context you just gave is more then plenty to go by and make sense of the security measures taken. I can totally imagine the Sentries to use smaller tunnels that stretch out along the river-walls to patrol and also keep an eye on any possible intruders through cracks and small gaps in the rock.

These crab-like creatures remind me of Euryptirids from the Ordivician Period. Though I remember many of them being much much bigger.
