The changeling lore definitely took a nosedive in later seasons. Unfortunately, they did this primarily through Ocellus, who is otherwise Best Changeling.
Yep, I can definitely buy that changelings can turn into dragons, bugbears, and hydras with all the same powers and strengths as the real deal. Yep, same changelings that didn't do any of that when they sieged Canterlot, sure thing.
