I assume it probably doesn't evolve, since they went out of their way to mention Eldergoss but no other evolutions of the Pokemon announced alongside it.

I suppose so but I also highly doubt that out of all the new ones only Gossifluer and Eldegoss were the only ones shown to have evolutions, though if that's the case I'm just a pinch disappointed but still enjoy the little fluffy dude.
I think Eldegoss was shown because it's like a signature of the Grass Gym leader that they also showed but didn't want to use Gossifluer because it was a basic stage Pokemon maybe?? I have no idea xD
