Well actually, he never liked the cold to begin with. He grew up in an underground of relatively constant temperatures. He doesn't do very well in really hot places either. Not as much of a fan of the cold more for having to wear more clothes. But still a fan of getting to dress up more.
That aside, Gabriel is like a Grandpa who loves kids like grand kids. Usually Sin's a good boy around the kids, so it probably struck quite a chord with Gabriel.
