you can tell me since i never got to finish the series back then, but dint they originally just have a set of pokemon without making new species or was it always like that where they make more? kinda hard to tell, i was around 8 years old when i watched it back then. i think its time to catch up. but im not sure if i should watch everything to know everything about the show. i been left back alot since the early 2000s

and honestly you don't need to watch everything from the anime to know what's going on, just a certain amount of episodes that show ash going to a new region, meeting new partners/friends, and sometiems establishing the new rival and team at the beginning of the season. then at the end of the season ash saying goodbye to hisfriends and sending the pokemon he caught from that region back to professor oak.
the best seasons to watch woudl probably be XYZ and Sun&Moon for extremely different reasons.
