One of the stories I remember reading was that a Norse goddess had a favorite pet which was a bird of some kind. Another god/goddess, in a fit of anger or maliciousness, turned the bird into a rabbit but the rabbit continued to lay eggs like a bird. A couple of versions of this story are mentioned in the wikipedia link I provided. How true those stories are, I don't know.

Similar to how evergreen plants were used to get people through winter as part of the holiday that became Christmas.
