In your words, then, people shouldn't be swapping Asriel's and Sans' roles with each other in the Undertale Storyshift AU. Or shipping Sora and Roxas from Kingdom Hearts. Or turning Rainbow Dash into a super-powered albino pegasus (also KD's thing) instead of using Rainbow Power. "Because it isn't canon."
Let these fans do what they wish to. It's no fun and there'd be an extreme lack of creativity if people stuck to canon all the time.
