But I have a big head and little arms, not sure if I this capture plan was well thought out.

As a competitive Pokemon player, your comment hurts me.
Bellsprouts (like most of the gen 1 Grass Pokemon) are Grass/Poison.
And as you may know Poison is super effective against Bug.
Not that it helps tho, as Butterfree mainly learn Psychic type attacks which are "Super Effective" against Poison.
(And also have very high Special Defense stat that helps against its weakness to Poison)

I'm not very competitive. I only ever play single player. And I usually only give my mons STAB attacks.

That's pretty much the only option you have in single player, due to having to end battles quick and then move on.
