For actual birds, their shit is normally brown, or can vary like ours does, based on diet. If they recently gorged on blackberries, they have purplish shit, but the default color is brownish.
The white that most people associate with bird shit would be their urine. That is usually an opaque white or cream color, but can also be translucent too, if it has higher water content. You'll often see brown solids mixed in with their whitish pee. If it is all whitish, with no brown, then the bird just peed. How thick the white stuff is depends on how hydrated the bird is.
