Well, not solved as I still don't know why I had been getting Thread Stuck errors, but I did find a workaround. Thing is, I had been rendering videos when I should've just been muxing them together, at least just for simply joining broken stream segments together. Plus, transcoding is like 1000 times faster than rendering, and that's a major plus when you're working on a potato.
I may have been over-dramatic saying I'd never stream again if I couldn't fix this, but that was just me being obsessive of making sure my streams where archived on YouTube because of Twitch not keeping VODs longer than either 2 weeks or 2 months based on if you're an affiliate/partner or not. It's stupid, and apparently VODs used to be kept indefinitely once upon a time, so why they changed that seems stupid to me.
