I don't really do all that much with my SubscribeStar, I kinda just see it as a way for others to show support for what I do. But if anyone were interested, I've been thinking about ways to try to give back to those who have donated. So far I've considered a poll system, where I present a list of possible drawings for the month and others get to vote on it, or access to content earlier than I would post here. Does anyone have any desire to see something like that? Or if you have any other suggestions about what you might like to see, I'd love to give them a read.
A lot of the most successful stuff I see with Substar/etc perks are things just like what you describe, polls where you can influence what gets produced in a given month.
Other perks might be early access to certain content (that's later released for free after a week/month/whatever), or certain subscriber tiers being entered into a monthly raffle for a sketch or something.
