Easter is in need of a new Easter Bunny. Billy goes in and pitches an Easter Plat instead. But Henrik comes in and steals the job, which doesn't even make sense in the first place since bunnies don't lay eggs!
I never understood why an Easter bunny hid eggs, but it is inspiration for some jokes, so I don't mind.  If you do know why, please let me know.

In answer to your question, may I suggest you click the following link.  https://en.wikipedia.org/wiki/Easter_Bunny#Association_...  In essence, it tells of the origin of the Easter bunny/hare.  One of the stories I remember reading was that a Norse goddess had a favorite pet which was a bird of some kind.  Another god/goddess, in a fit of anger or maliciousness, turned the bird into a rabbit but the rabbit continued to lay eggs like a bird.  A couple of versions of this story are mentioned in the wikipedia link I provided.  How true those stories are, I don't know.

bunnies and eggs are fertility symbols, Easter was a celebration of the spring planting season so such symbols were believed to ensure bountiful harvests.  Similar to how evergreen plants were used to get people through winter as part of the holiday that became Christmas.  Both holidays celebrated for many thousands of years before the church had them both renamed and everyone shrugged their shoulders and said "sure whatever."
