One of the stories I remember reading was that a Norse goddess had a favorite pet which was a bird of some kind. Another god/goddess, in a fit of anger or maliciousness, turned the bird into a rabbit but the rabbit continued to lay eggs like a bird. A couple of versions of this story are mentioned in the wikipedia link I provided. How true those stories are, I don't know.

Similar to how evergreen plants were used to get people through winter as part of the holiday that became Christmas. Both holidays celebrated for many thousands of years before the church had them both renamed and everyone shrugged their shoulders and said "sure whatever."
