When they're caught in headlights, their eyes dilate and they don't know what to do, so they freeze until their eyes can adjust.

Another weirdness I've witnessed: when catching ungulates in my headlights on country roads at night, they can begin to run, directly down the road in front of me. And they will do so for some distance. But should I turn my headlamps off for a moment, *THEN* they can veer off the road and out of harms way.
Both deer and horses have done this in front of me.
