So I'm still at odds about what Chaos is exactly. Is he a split personality? It made sense by the way Sonic shifted from Chaos to, well, Sonic when defeating Eggman for the first time. But than we see Chaos floating all around him and Sonic able to interact with him. If he's a spirit, than how did that happen?

You could say he is a spilt personality, but each person can interpret Chaos in a different way. Doesn't matter, as long as people know that he is still part of Sonic and only the negative energy from the original Chaos.
As for why he's a spirit, the rings Sonic wears are what cause Chaos to be a separate being. It allows the negative energy from corrupting Sonic but it accidentally causes Sonic and Chaos to split into who they are but only one can be in the body at a time.
