Am I the only one who actually reads them before they click "I agree"? And who, if they find something in the Terms of Service they don't agree with, doesn't click "I agree"? Like, for instance, in the ToS of twitch.tv, they say

Read that carefully to see what I mean. It's pretty sneaky.

I think you're trying to read too much through the lines here, but that line in of itself is not exactly clear. If that line were clarified to read something like 'Twitch may offer certain voluntary additional services for which you agree to pay fees for', maybe this journal wouldn't exist, or it would discuss some other company's TOU.
