How are there infinite sets of infinite, with some sets of infinite being smaller than other sets, i.e. the infinite between 1 and 2 being smaller than the infinite between -∞ and +∞....?

Simple.  Infinite is an abstraction, not a concrete substance.  It refers to 'all there is without restriction of potential'.  Think of it like dimensions.  Thus, an 'infinite' of one abstraction, while conceptually infinite, is in-conceptually finite, and thus one infinite is more potentially infinite than another infinite.

I find it helps to picture 'infinity' by being able to conceptualize 'eternity', which I do by listening to Britney Spears for an hour.  It feels like an eternity.

A barber (who is a man) shaves all and only those men who do not shave themselves. Does he shave himself?

No, he prefers the gruff look, and his wife hates stubble.
