A good system I've seen with high demand artists is, announce when you'll open, stay open for about 20-30 mins, then take all those who are interested and chuck em in a raffle draw, those that miss out get extra entries next time, and so on!

A lot of artists I know personally are moving towards picking commissions instead of first come first served. They'll open slots for a day or two, then close them and decide which ones to take. It's a much fairer system and let's them take a variety of stuff so they don't wind up with 8 full detail illustrations or 8 five minute sketches
