I've seen Chaos head, berserk, high school of the dead, trigun, .hack

You can't go wrong w/ case closed (Dectective Conan) for a good ol' fashioned who-done-it.

Try Deadman Wonderland, it's pretty brutal and bloody.

Black Lagoon is pretty cool. Also, Ghost Hound is kind of a mystery, with a supernatural element. Like DOtter said, Lupin III is and oldie but goodie, especially the Castle of Cagliostro.
